I would not upgrade to 7.0 until it stabilizes.

I would not bother to upgrade to 6.2 from 6.1 at all, assuming you have been
keeping up with the patches on your 6.1 system.  Otherwise, upgrade to 6.2 and
apply the post-6.2 patches. 

The upgrade from 6.1 to 6.2 is straightforward.
