It is a bit subtle, but is possible. Edit .pinerc in your home
directory, adding 'From:,' (w/o quotes) to the default-composer-hdrs
configuration option, as below:

# Only show these headers (by default) when composing messages
default-composer-hdrs=From:,
	To:,
	Cc:,
	Attchmnt:,
	Subject:

Second, add the option 'allow-changing-from,' to the feature-list
configiration option, as below:

# List of features; see Pine's Setup/options menu for the current set.
# e.g. feature-list= select-without-confirm, signature-at-bottom
# Default condition for all of the features is no-.
feature-list=enable-incoming-folders,
	include-attachments-in-reply,
	enable-unix-pipe-cmd,
	signature-at-bottom,
	expanded-view-of-folders,
	show-cursor,
	show-selected-in-boldface,
	allow-changing-from,
	enable-bounce-cmd

Then, when you compose a new message, you enter in a from address just
like do a to address. Further more, you can use auto-expand/replace from
the address book on the from line just like on the to and cc line. I use
this on a regular basis and it is quite handy. All mail readers and
mailing lists I have dealt with handle the entered from address correctly.
Though your actual email address (i.e. username at hostname.com) is still
buried in the mail headers (look at the headers of this email as an
example).
Hope this anwsers your question. TTYL.
