this probably varies by distribution.  on my redhat machines, i assign
the hostname in /etc/sysconfig/network, on the HOSTNAME= line.  i use
the fully-qualified domain name; i don't know if this is required or
not.  as an example from my home machine:

| $ cat /etc/sysconfig/network
| NETWORKING=yes
| # FORWARD_IPV4 removed; see /etc/sysctl.conf
| HOSTNAME=slinky.scrye.com
| DOMAINNAME=scrye.com
| GATEWAY=216.17.174.110
| GATEWAYDEV=eth0
