Have you looked at using something like VNC?  It would require another
computer but should do what you want, even if it is overkill.

You will always have a issue where the projector will not show a area
of the screen that that is visible to the laptop user.  This in it self
would probably make it more frustrating than just running the laptop at
a lower res.
