dump, tar, Amanda, Arkeia Light to name just a few.  Each obviously has
its strengths and weaknesses (which I will leave up to you to research).
I have used all of them and to do what you describe above, I personally
would use tar.  Just write your own shell script for what to backup and
invoke it via cron for scheduling.
