I think you'd be happy with Debian.  I put it on less than 500MB of disk 
in a PIII 500 with 128MB of RAM and used the rest of the disk to hold 
ISOs.  This was the net-boot, net-install server for installfest.

I put Ubuntu (server) on it once too.  Although that worked as well as 
Debian there were a lot more packages that I went through and removed. 
Ubuntu has 2 meta packages that depend on everything they want on a bare 
system.
