I used an HP 8560P EliteBook for the last year or so that was UEFI but
probably operating in a Legacy/Compatability mode.  I didn't even know
it was UEFI until I went looking.

Everything just worked out of the box and it was a surprisingly
comfortable system to work on.  A little more expensive than the cheap,
plastic consumer notebooks out there and similar to the ThinkPad line
from Lenovo.

I wouldn't be so afraid of UEFI and if you intend to keep your laptop
for a while, you might want something with a UEFI foundation instead of
a BIOS foundation.
