sendmail only needs to be running to receive mail.  if it's not running
it's not a security threat.  sendmail will invoke itself as needed to send
outgoung email.  postfix is a much lighter MTA, and there are things like
nullmailer and ssmtp as well that do nothing but send outgoing email.
