An update on my NFS mount problems:

Thanks for Dan and Ryan for their insight-- it turned out the problem 
was with portmap (surprise).  When I tweaked the startup script a bit, 
I managed to make it happier and the mount connection is instantaneous 
now.

As a side note, in my reading I learned it's not necessary to run 
rpc.statd or rpc.lockd on the client.  The only potential problem with 
that is the lack of NFS file locking.  For my purposes this isn't an 
issue, but in a larger LAN it may be.
