In re backups, one book I like is O'Reilly's "Linux Server Hacks". If I
remember right (my copy is at home), one chapter/section involves
backing up with tar and ssh. Another is rsync over ssh, and they also
have a section with pax (my poor beloved pax).
Heck, I like the whole book. I still use it as a sort of CVS helper as
it has quite a few CVS sections.
