The easy way to do this from Gnome (unless Ubuntu really changed things)
is to go to Applications->System Tools->New Login.  It sends a command
to GDM to launch another X session, while leaving the current session
running.

If you want a second X session always running, you can get GDM to do
that too.  Read section 3.2.8 here:
