I normally don't use DAV, because I've run servers at different
locations.  We use "rsync -e ssh", and for backups we use a nice
package called scponly, which sandboxes incoming ssh rsync sessions.

Some people run rsync in server mode.

Others run locally to USB/Firewire drives (as noted earlier) and
network mounts.
