My /home 15 gig but I'm only using about 4 of it.  I keep the larger 
data files (home movies, music) in /data which is rather large (224 gig 
allocated and 150 used).  I also keep my vmware vm's on a local 
partition that is separate.  I create each vm at about 10gig each and 
have 75 gig allocated for that.   In your case (assuming a single local 
disk), I would go ahead and put the vm's in /home and make home as large 
as possible.

At work, we do a full Redhat install and then add on some commercial 
software and that load takes up about 15 gig.  So I think 20 of your 
100gig could be put toward the system partitions and the rest toward 
/home.  If you have a separate machine to backup your data to, then the 
20g of system vs. 40g will be less important.
