Why not just make the iMac the server when it gets there?  :-)

For "tiny" home servers where I don't need a lot of horsepower and would 
  like the machine to be quiet/low power use -- the mini-ITX older 
motherboards on eBay and other places tend to be cheap ($100 or less) 
and with some reasonable RAM and a decent hard drive or two...

They're small, quite, unobtrusive, and "just work".  The fanless ones 
are slower, but very quiet, of course.

If you need any serious CPU horsepower, they're not the right option.
