I like the "grip" program.  In particular, I like the "auto-rip" settings
where it ejects the disc when done, and starts ripping when it detects the
tray has closed with a new disc in it.  Of course, I'm hardly impartial --
I implemented that feature in grip.  :-)

flac is the only way to go.
