I'm not sure where you get that impression. The documentation for
relayhost:
http://www.postfix.org/postconf.5.html#relayhost
Says:
The next-hop destination of non-local mail; overrides non-local
domains in recipient addresses. [...]
If you want more fine-grained control of delivery, you can use the
transport table:
http://www.postfix.org/transport.5.html
