I'd think a BeagleBoard would work just as nicely, and is specifically
designed for extensions like this - though you could just as easily
connect the USB-to-serial to the serial pins on the board instead.
BeagleBoard's power requirements are simpler than the miniITX.
Technically you can power it with a USB OTG port but I use a power brick
for BeagleBox. The xM model has an eth port but the C4 and earlier
require USB wifi (unless you extend it with an add-on board). There are
Ubuntu and OpenEmbedded distros for it, though if you want "off the
shelf" one of the nicest distros is the SuperJumbo from AlwaysInnovating
- it has 4 OSes in one distro including Ubuntu, Chrome and Android.
Might be more expensive and there are no cases yet, however. And the
OSes might be overkill for this kind of project. But the board layout
is open source, if that helps.
