essay.txt looks like a regular file name. Do you really mean to cd to it?

> cat * > essay.txt

Not sure what you are needing to do, but this might suggest a direction for you:

for dir in $(find /multivolume_snapshot -type d) do
   echo "$dir"
   cd "$dir"
     ????
done

If you have more directories than the command line can handle you will need to
use a pipe/file in a read loop.
