I think your best bet will be to use a string level. Or, a 4 foot or
longer beam level, working along your gutter.

If you really want to use your phone, I suggest getting an extremely
detailed topographic map of your lot, such that you know the elevation of
the ground directly below each corner. Then drop your phone from each
corner, and record the time it takes for it to hit the ground. You'll
need an accurate stopwatch. O;-)
