I guess I don't quite follow. Your boots now use the graphical boot,
but when you edit the boot entry in grub it's not listed there? I can't
explain that.
However, I can explain the /etc/default/grub is used by grub2-mkconfig,
which is not normally used by Fedora tools. Instead, it uses grubby,
which bases new kernel entries on the existing current entry. So you
can in general, ignore /etc/default/grub, or remove rhgb + quiet from
there as well in cases someone runs grub2-mkconfig in the future.
