Steve,
I was doing exactly(*) that with GNOME 2 on Ubuntu for years and it worked
great (with intel embedded graphic cards).
Unity and GNOME3 both broke it badly, so I switched to KDE on kubuntu,
which works only ok. So, I'd try mate (the gnome-2 forking), which is in my
todo list.
YMMV, good luck with that, etc etc etc. By the way why do you want to use
monitors instead of buying the more useful and faddish tablets? Heck they
now even have a KDE tabled (just to avoid the
http://en.wikipedia.org/wiki/Poe%27s_law -- that's sarcasm).

Please let us know how it goes!

(*) I'm not sure I was doing EXACTLY that: I was using laptop screen,
external monitor and TV, not 3 TVs and a projector. By the way, do you have
a graphic card with 3 (three!) TV outputs? Never seen one!
