TeX and LaTeX are the first things that come to mind.  Infotex is another 
possibility that would put you in good with the FSF camp--it lets you 
generate info or TeX from one file.

The learning curve on LaTeX can be kinda steep or not, depending on how 
picky you are about the end result.  If you don't sweat the small stuff it 
is very easy.  If you care a lot about details it is murder.
