Install a recent version of GPhoto2 (http://gphoto.org/) and then

  gphoto2 --list-cameras

will give you a very good idea of whats supported.

Alternatively, you can buy pretty much any camera that uses compact-
flash memory and then just use a compact-flash card reader.  Most USB
compact-flash readers are cheap and compatible with Linux.
