There are really two reasons not to do that:
1) Performance, as you said. Since you're writing to both drives in a
RAID-1 configuration, you'll be crowding the bandwidth on the IDE
channel. Using two channels will allow you to have greater speed.
2) Fault-tolerance. If something goes awry on the IDE channel (power
spike?) you could potentially fry both drives-- thus destroying the
very reason you mirrored them in the first place. Having them on
separate channels lowers the odds that Something Bad will happen to
both drives simultaneously.
